The Storm

So there was a snow storm three weeks ago. Nemo – I’m sure you heard of it. It was officially named by the Weather Channel, much to the chagrin of the National Weather Service. But three weeks ago – that’s about the last time I sat down at my computer to relax. (These are some of the photos I took of the storm!)

The week of Nemo I joined the team at RunKeeper – as a project manager leading globalization efforts! Beyond the job itself – which is absolutely thrilling – I’m most excited about working with a team of people who are kind, silly, and have a lot of fun together. I knew I would be in good company when in my exhaustive interviews I met cookbook lovers, people excited about home sausage making, home brewers, and another whose wife runs a small CSA/recipe club.

This week confirmed it, when our Hackathon had us working on crazy projects, and suddenly I found myself recording audio on ProTools (something I’d never done before), and dressing up as a “real runner” in order to properly make a fool of myself infront of my new coworkers. It paid off – our team won prizes in the “Audio” and “Best Demo” categories, and I personally won a Nerf gun.

The transition has been a little bit jarring – all of a sudden I’ve been thrust back into a daily grind, and it has been a challenge feeding us healthy meals, without resorting to more takeout.

Thankfully, not every night has been a wash. Here are a few of my favorites – easy meals that I put together quickly while I set about getting other things done.

Roasted sausages + Brussels Sprouts: the sausages are garlic thyme from M.F. Dulock (part of my Meat Club subscription). I usually keep extras in the freezer to defrost and cook when I really can’t bother to do any other work. They went into the skillet with a few cups of brussels sprouts doused with some olive oil, salt, and pepper at 350F, and after about 20 or 25 minutes I flipped over the sausages, agitated the brussels sprouts, and roasted for another 25 minutes, until the sprouts were soft and a little bit crispy.

Steak Salad: I don’t usually cook steaks for dinner, because they are expensive, and I’m happier with good quality ground meat or cheaper stewing or braising cuts for my meal. But sometimes, they show up in Meat Club, so I’m “forced” to eat them. Having not eaten enough vegetables, I opted for steak salad.

I seasoned the steak with salt and pepper, and seared it in a little bit of butter in the skillet. This was a thin steak, so it cooked in about 3 minutes on each side.

I let the steak rest as I heated up some leftover roasted baby potatoes, made a quick sharp mustardy dressing, and tossed it with some butter lettuce.

And then there was sausage night two (do you see a theme here?) This was a spicy Italian sausage, freshly made at the butcher, which I served with some mashed purple potato, and a spinach salad.

And finally, quick garlic chicken thighs, with more of those leftover roasted baby potatoes (another theme!), tossed with some steamed green beans, and a lemon-anchovy vinaigrette. The chicken is simply coated with salt, pepper, and garlic powder – yep, garlic powder. It forms a crispy crust that you can’t get from the fresh allium – and cooked on the stovetop in a little bit of coconut oil, about 7 minutes on each side, until cooked through.

This week, there were a few too  many meals out… erm… most of them, but I’m looking forward to getting back into the swing of things!

Catching up.

Despite my best intentions, I didn’t get to CrossFit until the very end of the week. I was hoping to make it to the 9 a.m. class, but was thwarted by the Newton Chilly Half – I couldn’t find a way to get around the runners!

Instead of getting to class at 9:20, and being forced to do lots of burpees, I headed over to the Charles River Center, strapped on my Garmin, turned on my RunKeeper, Pandora, and set about trying to beat my 5k time from 8 weeks ago. I’ve been exhausted for the past 7 days straight, but I still managed to pull out a 31:40 run, which was an improvement on the same course!

After my run, I headed over to the gym to get some strength training in. Things were quiet because most people were watching gym-mates compete at the Garage Games Finals at Crossfit Southie. I went for one of the workouts I missed this week:

Although the prescribed weight for women is 80, I went with 55, and it nearly killed me. My Snatch form is horrific, and I spent the whole time just muscling up the weight. (For non-gym folks, this means that instead of using intelligent form and force, I slowly pulled the entire weight and tried to push it with no momentum over my head. Ouch.) After watching me suffer for the 20:21 it took me to get through this, Coach D-Payne was super kind to help me out on technique. Keep the bar close! Drive those hips! DROP INTO A SQUAT! After some serious practice, watching video of myself on Coach’s Eye, and much appreciated patience, my form was significantly improved.

When I got home, I made myself a banana pancake with almond butter and maple syrup, a cup of coffee, and read a few chapters of Shucked, which I’m very much enjoying.

I had a significant amount of work to do today, but maximized my productivity by batch cooking for the week. I started out by roasting carrots with olive oil, salt and cumin.

Then I chopped up two heads of cauliflower, and steamed them with a half dozen cloves of garlic for a half hour until tender. I then drained the pot, added salt, pepper, and a generous spoonful of schmaltz (chicken fat!) and pureed it with my immersion blender. I transferred it to a pyrex and put it in the fridge. The “Mashed Faux-tatoes” will last me several days, and reheats well.

I also roasted some delicata squash with salt, pepper, and coconut oil.

And fried a few fresh sausages for my lunches. One’s a fresh pepperoni, and the other is hunter’s sausage with bacon, both from M.F. Dulock.

For dinner, I fried up some pork chops, served them with some of the mashed cauliflower, and a side of collard greens cooked with bacon and cider vinegar.

Now if I could only get some rest before this long week ahead of me! Happy cooking!

Clifford A. Wright’s Swedish Sausage and Brussels Sprout Stew

For quite some time, the prevailing mental association I had of Sweden was Jamie Lee Curtis in ‘Trading Places’ running around a train claiming to be “Inga from Sweden” – despite the fact that she was wearing Austrian lederhosen. I still find myself laughing hysterically at this film when it comes on TBS. If you haven’t seen it, please do.

As for my current Swedish associations, Inga has been replaced with IKEA, the chef Marcus Samuelson, Trina Hahnemann’s lovely Scandinavian Cookbook, and Stieg Larsson’s Millenium trilogy. (The Girl with the Dragon Tattoo books).

This weekend we went to see David Fincher’s version of “The Girl with the Dragon Tattoo”, which didn’t hold up for me as much as the Swedish films, which I adored.

What the movie did succeed in, was renewing my lust for the Swedish countryside. I became hungry for Swedish food. I wanted comfort food that reminded me of the simple, bare landscape. Also, I wanted comfort food that would help me to have the physique of Rooney Mara in her nude scenes of the film. Yes, I know that’s not going to happen. But loading myself up with healthy veg is a start.

So I picked up my copy of Clifford A. Wright’s “Real Stew: 300 Recipes for Authentic Home-Cooked Cassoulet, Gumbo, Chili, Curry, Minestrone, Bouillabaisse, Stroganoff, Goulash, Chowder and Much More” (what a mouthful! a tasty mouthful) which I got on a field trip to Harvard Common Press, and flipped to this Swedish Sausage and Brussels Sprout number. She’s not the most beautiful, but is chock full of tasty ingredients!

I’ve been cooking out of “Real Stew” for the past few weeks (beginning with a stellar recipe for “Classic Egyptian Lamb and Green Bean Stew). With New England weather the way it is, this cookbook came at the perfect time, right when I needed warming recipes for the quickly cooling weather.

I’m a big fan of any sort of soup, stew, or braising book, particularly when it is cold out and my strongest desire is keep warm and stir things for a couple of hours.

Real Stew isn’t full of glossy photos, but since stews aren’t usually the most photogenic, I wasn’t at all bothered. Wright does a marvelous job in the headnotes whetting your appetite for each recipe. The book is just as much a food history primer as it is a cookbook, and I learned a lot curled up in bed with it. (Although, this is unsurprising as Wright won a James Beard for food writing for his book A Mediterranean Feast. He is very good at the craft of cookbook writing.)  

This is a very simple recipe that can be put together in under twenty minutes from start to finish.

I made this recipe almost to the letter, which wasn’t hard, as there were nine ingredients including salt and pepper. I used smoked Turkey kielbasa from Trader Joes, which made it tasty enough, but if you can get the Swedish sausage that Wright mentions, I’m pretty sure it would make this recipe spectacular. Rather than a bouillon cube, I used “Better than Bouillon”, which, unless you have home made beef stock on hand (and praise you if you do), is pretty much the bees knees.

Now, my one word of warning is: this soup tastes like Brussels Sprouts, which, may in fact be obvious, because it is one of the two main ingredients in the title, but you won’t convert Brussels Sprouts haters with this recipe. Which is fine, because that makes more for you.

Swedish Sausage and Brussels Sprout Stew

makes 4-6 servings

“This stew is one suggested to me by my Saab mechanic Haken Wiberg, who tells me that this stew, called korv-och kal-gryta, uses a kind of sausage called falukorv (or falnkorv), which comes from the town of Falun, northwest of Stockholm. It is a thick, bologna-like sausage popular throughout Sweden and made of beef, lean pork, and pork fatback. Sometimes dried milk is added to it. It is then smoked before finding its way into stews. The Swedes are nuts about falukorv, as you will see by visiting www.falukorv.net on the Internet. In this recipe it is cut into chunks to cook, after peeling the skin off. A good substitute would be a small, one-pound mortadella sausage, such as that made by Arzuman (ask your store manager). Arzuman uses dried milk. If you prefer beef, try Hebrew National beef bologna. A Swedish housewife would typically use a beef bouillon cube, but if you do, make sure you don’t use more salt than called for because the cubes are high in sodium.”

1 pound small mortadella sausage or large cooked or smoked Polish kielbasa, skinned and cut into large dice
1 large onion, chopped
2 large carrots, cut into 1/4-inch-thick rounds
1 1/2 pounds small Brussels sprouts, sliced lengthwise into thirds
1 bay leaf
2 teaspoons salt
6 black peppercorns
2 cups Beef Broth
1 cup water
Finely chopped fresh parsley leaves for garnish

1. Put all the ingredients, except the parsley, in  a stew pot, and bring to a boil. Reduce the heat to medium, cover, and cook until everything is tender, about 12 minutes.

2. Sprinkle with parsley and serve.

Influential Women at Omnivore: Victoria Wise

I’ve been thinking lately of how many amazing influential women I’ve met at Omnivore books over the past year. The list is pretty astounding – Paula Wolfert, Cindy Paulson, Alice Waters, Mollie Katzen (although she didn’t speak) to name a few. So I think I’m going to make a point to post about these great women – they deserve immense credit for changing the world of food for the better. Here is the latest in influential women at Omnivore:

Behind those super hip red glasses is a woman we should all respect – Victoria Wise.

At 27 years old, Victoria was the first chef at Chez Panisse in Berkeley. A former philosophy grad student at Berkeley, her cooking education was mostly trial by fire. The first dinner she cooked was Duck with Olives. She sourced the duck from Chinatown, made the stock, sauce, everything from scratch. One of the big lessons she learned that night – you can’t take a recipe for 12 and multiply it by 20 and expect it to turn out. It was, in her words, “Very Tomato-y”.

After Chez Panisse, she set up shop across the street and opened a charcuterie deli called Pig-by-the-Tail. “It was an artist’s workshop, it was not a business” she confided – but it was a different time then – like Chez Panisse, the goal was never to get rich, it was to make delicious food to share with friends. While Pig-By-The-Tail may not have made Wise wealthy, it gave her the material for her first book in a long line of cookbooks – “American Charcuterie“, a standard that we sell at Omnivore (nominated for a James Beard in ’87). (It’s out of print, but if you call we can send you a signed copy!)

Since writing ‘American Charcuterie’, she has gone on to write over a dozen more cookbooks, including ‘Good & Plenty: America’s New Home Cooking’, ‘The Well-Filled Tortilla Cookbook’ , ‘Foods Of The World: Mexico’,  ‘The Vegetarian Table: Mexico’, ‘The Well-Filled Microwave Cookbook’, ‘The Vegetarian Table: Japan’, ‘The Pressure Cooker Gourmet’,  ‘Stories and Recipes from the Robert Mondavi Kitchen’, ‘The Armenian Table’, ‘The Olive and The Caper: Recipes’, and ‘Gastronomy, and Lore of Greek Cooking and The Gardeners’ Community Cookbook’. Her newest book, ‘Sausage’ came out just last month, and she has another book, ‘Bold Food’ on the docket.

As you can see, the breadth of her work is pretty incredible.

Victoria’s goal in life is to “convince people that they really can cook.” Her cookbooks are approachable, filled with great recipes, but importantly great stories. Cookbooks are so much more than recipes – a good cookbook creates the context for good eating. Victoria loves writing about food as much as she loves eating, and confided unabashedly that she thinks about food all the time.

That’s a woman I admire.
