The soup that wasn’t…quite…right.

Before we talk soup, here’s something nice. I get quite a few press releases sent my way, and usually nothing much happens with them other than me hitting the delete button and grumbling that they don’t just auto-delete themselves. Sorry, PR flack, but so many of these emails are terribly boring, and I don’t have need for your elbow salve/yarns made of the hair of unicorns/metal shaker cups that glow purple and are eco-friendly. Okay, sometimes I forward the best of the best to my friends, and we have a good laugh – such as “a mustache made for cats“. Seriously, that was the best press release ever.

But this video is nice, and I think that Bee Raw’s Save the Bees Fund is pretty rad. Launched earlier this year to help research and combat the global die-off of the honey bees (yeah, press release words verbatim), these guys are doing some cool things. And I think that bees are the bee’s knees. Wait, can they be? Oh my god, can they bee??

If you have 9 minutes, or even just a few, go ahead and give it a look.

Okay, now that my PSA is out of the way, here’s my dinner: grilled chicken, and some of the sweetest little dry farmed tomatoes I’ve ever had. Mmmm dry farmed tomatoes. Little orbs of summer. Even though it’s fall already. Sigh. (Hint, no soup in the picture.)

So the soup. These tomatoes were actually supposed to go in my salad, and that my vegetable course was going to be a curried zucchini soup, made in my Vitamix blender. There’s this fancy-schmancy “hot soup” setting, where you put in all your ingredients, whirr for several minutes, and it heats up for you. I was skeptical, but decided to just go for it tonight.

And by go for it, I mean… not actually think the process out.

Do you know what happens when you put raw zucchini, raw spices, and water in a blender? Well, even with the soup getting hot (which admittedly, it did completely successfully), I also got myself a blenderful of bland raw soup. Raw. Raw zucchini, raw spices.

Rather than being defeated, I chopped up a few extra tomatoes on our plates, ate dinner, and then simmered my raw soup for half an hour on the stove top until it became the curried zucchini soup I was hoping for. And I’ll just have to eat it tomorrow – which, bonus! will give the flavors real time to develop.

Not everything that comes out of this kitchen is a success, but I do take a great deal of pleasure in trial and error.

I’ve really been enjoying the new era of Bon Appétit with Adam Rapoport at the helm. It feels like they’ve made a good comeback and successfully refreshed themselves. The creative direction feels modern and relevant, and they have been taking chances on some great up-coming photographers. (It was a treat to see the work of Kimberley Hasslebrink and Brian Ferry in recent issues.) Lately I’ve been really excited for each issue to arrive – and when it does, I find myself flagging multiple recipes to try, and actually heading in the kitchen to cook them.

As part of this year’s kitchen resolutions, I’ve been trying to make a new sauce every week – sometimes a pesto, salsa verde, or chimichurri. Or even a good mayonnaise spike with fresh herbs and garlic. Having a sauce on hand is a good incentive to cook when you are feeling uninspired – you know you already have one component finished, a perfect accompaniment to chicken, roasted vegetables, spooned on eggs, or to refresh leftovers.

A few months ago I had flagged a segment of the magazine called “Master Fresh and Easy Sauces”, which had an entire selection of sauces I’d be interested in eating: Romesco, Green Harissa, Avocado-Lime Sauce Vierge, Kimchi Relish, and Charred Lemon-Shallot Chutney. The Romesco made the cut because I had all of the ingredients already in my pantry.

The original recipe called for one large pepper, although I used 1/2 the jar from Trader Joes (about 3 medium ones), and substituted almond meal for toasted slivered almonds. I think you’d get a little bit more depth from toasting, although frankly I found that the sauce had enough punch without. For the tomato purée, I’ve used both Italian passata and Trader Joe’s tomato sauce in the can with success here.

1 large roasted red bell pepper from a jar
1 garlic clove, smashed
1/2 cup almond meal
1/4 cup tomato purée
2 Tbsp. chopped flat-leaf parsley
2 Tbsp. Sherry vinegar
1 tsp. smoked paprika
1/2 tsp. cayenne pepper
1/2 cup extra-virgin olive oil
sea salt and freshly ground black pepper

In a food processor, pulse the first 8 ingredients until finely chopped, and add slowly add olive oil until smooth. Or, if you can’t exercise patience, put all of the ingredients into a large cup, and blend with your immersion blender. (Quick, less to clean, and just as delicious.)

Makes 1 1/2 cups. Keeps in the fridge for a week.

Turkish Tomato Eggs

Yesterday was a long day. I tried to avoid the television, but the tweets and messages and blogs of my friends remembering 11 years ago were sobering. I made the mistake of turning on NPR while in my car, and choking up while driving and listening to the short memorial stories.

And then I met my mom for a walk on the ocean. The air was the warm end of summer air, the sky was bright. The Atlantic was flat and deep blue, and seemingly endless. We talked about life, food, her first day of preschool. This walk – the same one we’ve gone on since I was a small child – always puts me in a better place.

Reluctantly, I came home again to an empty house, and although it’ll be the two of us again tonight, it was lonely. It was also late, and I was tired. My mom had given me several ripe tomatoes from her garden, and some fresh parsley, so I set to work putting together a riff on Turkish menemen – scrambled egg with peppers and tomato. Because I was pepper-less, I just added an extra tomato. I find that you can never eat too many tomatoes at the end of summer, because soon they’ll be gone, and you’ll regret your missed opportunities.

This is one of those dishes that I come back to again and again, the type of food that I eat alone. It’s dead simple, cooks up quickly, and works just as well for dinner as it would for breakfast. It also, for the record, tastes great when you come back at 2 am after a long night out.

Turkish Tomato Eggs
serves 1

1 tablespoon olive oil (or 2!)
2 or 3 ripe tomatoes, chopped or grated
salt
pinch of chile flakes (Such as Urfa Biber or Piment D’espelette)
pinch of thyme
3 large eggs, whisked
small handful of chopped parsley

In a non-stick skillet over medium heat, pour a generous amount of olive oil (a tablespoon or more if you can rationalize it). Add the chopped tomatoes to the pan, and season with a little bit of salt, a large pinch of chile flakes, and a small pinch of thyme. Stir, and let it bubble for three to five minutes.

In a bowl, whisk three eggs with a small pinch of salt. Pour the egg mixture over the tomatoes, and let it set for a bit, and then stir gently for a few minutes. This dish is fairly soupy, and not dry, but you are looking to cook the whites. When cooked, add a large handful of chopped parsley, and eat right away.

Summer squash is upon us at farmers market! And it’s cheap cheap cheap! I’ve been getting it for a dollar a pound or less, and using it baked, in salads raw, in soup, or just sliced thinly and sauteed with a little bit of olive oil, lemon juice, thyme, salt and pepper.

Today I decided that I’d go for it baked with potatoes and cheese in a little gratin – enough substance for a main meal, served with a little fresh salad of tomatoes, roasted peppers, and fresh herbs. I’ve been trying to make a good amount of my meals vegetarian, and this combo was both tasty and quite satisfying, even for the omnivores.

The trick to this gratin is slicing the potatoes and squash really thinly, so they cook up speedily and the whole dish is cooked through. And for the tomato salad, you want to use really ripe tomatoes, preferably heirloom tomatoes, that haven’t been refrigerated, otherwise you won’t have the burst of flavor that is so delicious in this salad.

Summer Squash and Potato Gratin  – serves two as a main course

:: Preheat oven to 375 degrees. On a mandolin or with a peeler, very thinly slice a pattypan squash, a summer squash (or zucchini), and a russet potato into a medium bowl. You want to make sure your potato is paper thin, or else it won’t cook all the way through. Thinly slice a shallot, and add it to the mix. Coat mixture with several good glugs of tasty olive oil, add in a few sprigs of fresh thyme, a good pinch of Maldon or other coarse salt, some fresh black pepper, and a half a cup (or more) of freshly grated Parmesan cheese. Toss well, and somewhat evenly layer into an 8-inch cake pan, lined with foil, cover with another layer of foil, and bake for about 40 minutes. Take the foil cover off, and bake an additional 15-20 minutes until top is slightly browned and crispy.

:: In a bowl, slice a few really good heirloom tomatoes, about a cup of roasted red peppers, and a good handful of chopped basil, parsley, and mint. Dress with a simple balsamic vinaigrette – one part balsamic to about three parts olive oil, and a dash of salt and pepper. You can add some green lettuce, optionally. If you don’t have roasted peppers – make some – preheat the oven to 400, and pop the peppers onto a foil lined baking sheet, turning every 10 minutes or so until they have charred slightly on the outside. Let ’em sit for ten minutes or so until they are cool enough to peel, then peel, and remove the inner seeds and the stem. If you still don’t have peppers – just add a few more tomatoes, and maybe a few cubes of fresh bread if you want. Almost like panzanella. That’s about it.

Cheese of the Month Challenge: Baked Shrimp with Feta

In an effort to diversify my kitchen productions, I’ve been looking for new food blogger challenges to have fun with. One of my favorite challenges I have found so far is the “Cheese of the Month” challenge from Adventures in Gluttony, which provides a monthly cheese suggestion to create something delicious with.

This month’s featured cheese is feta, which coincidentally happens to be one of my favorite cheeses.  I use feta and it’s cousin white cheese (Turkish ‘beyaz peynir’) almost interchangably, the latter being slightly less salty. I usually have a block of feta stored in some fresh water in my fridge, and eat it often plain, for breakfast, with a little slice of tomato and cucumber and a slice of toast with jam. Or, I crumble it on salads, into soups, or even on burgers.

For the challenge I decided to incorporate it into my lunch, baked with shrimp. This is a very loose adaptation of a broiled recipe my mother uses that I love and really should get a hold of, but nevertheless it was quick, easy and very very tasty. The feta I used was Mt. Vikos, which I picked up at Cowgirl Creamery in the Ferry Building in downtown San Francisco. I only used an ounce of feta (all I had left), but the flavor still comes out wonderfully!

A Quick lunch: Baked Shrimp with Feta
serves 1

Ingredients:
4 or 5 shrimp (I used frozen)
A few small canned San Marzano tomatoes, with juice
1/4 cup frozen peas
1 ounce feta
a pinch salt,
a pinch pepper
a couple of good pinches oregano

Method:
1. Couldn’t be simpler: In a baking dish lined with foil, put all the ingredients, stirring gently to allow the tomato juice to coat everything. Whack it in the oven at 350 degrees for about 25 minutes, until shrimp are pink and cooked.

To serve: I served this over a bed of steamed rice, usually I use brown, but I’ve run out and need to pick up some more. I use frozen single servings of rice that I cook and wrap while still warm, which traps the moisture and allows you to easily pop one into the microwave and eat for lunch as if it was freshly made.
